How a Stockroom in Makati Became a Secret Bar
The Bevvy by Don Revy is a stockroom-turned-ideal showcase for the owners’ line-up of wine and spririts, so ideal that their clients just started drinking their bottles right there.
There is no signage from the street, and the location is the last place you would expect to spend your happy hour. But, that seems to be what people want these days. Those who have it, as they say, do not need to flaunt it. And, that is the kind of people who have developed a taste for the fine wine and spirits imported and distributed by Don Revy.
Co-owner Jojo Vega—former marketing executive for some of the world’s biggest brands like San Miguel and Huawei—imparts how he and his partners decided to transform what was meant to be a stockroom in a decrepit building along Pasong Tamo Extension into one of the moneyed tito crowd’s best kept secrets.
“It was really for convenience,” Vega started, “since our warehouse is all the way in Muntinlupa and most of our clients (for Don Revy) are in Makati anyway. So this space was really just meant to be a stockroom and office.” As their client base grew, the need for a permanent showroom became a priority and entertaining clients was becoming more regular. So Vega— along with Scottish partners Piers Kinloch and the late Robbie Ferguson—decided to fashion half of the storage and work space into a showroom with a fully-functional bar.
The Bevvy (Aussie speak for “drinks” or “booze”) bar list naturally consists of Don Revy’s line-up of premium wine and spirits. A lot these wines are sourced from Australia and New Zealand, since Kinloch and Ferguson were both long-time residents there before moving to Manila. Don Revy even has its own wine label called Pebble Lane, and their highly-quaffable Sauvignon Blanc and Pinot Noir are sourced and bottled straight from a vineyard in New Zealand. Aside from the wines, they also bring in the heavy stuff such as the entire line of Whitley Neill gin and a selection of Scottish single malt and Irish whisky.
This is not a cocktail bar. They might not even have lemon at times because nobody really asks for it. In fact, the only cocktails the bartender can scrounge up might be a gin and tonic, considering that Don Revy brings in some rather excellent tonic. They also have some good Czech beers on tap (and in bottles if you wish to take them home) and Crabbies ginger beer. If their selection seems rather odd and outlandish, it is deliberate on their part. “We are filling in the gaps in the market,” Vega explains.
Despite its hidden location amidst warehouses and offices, The Bevvy is not, strictly speaking, a speakeasy. For one, music and rambunctious merry-making is encouraged. The space is just large enough for a party of 60—up to 90 if you don’t mind standing. Vega works with a caterer who provides their private functions with a bespoke menu to serve alongside their beverages. Corporate events required an AV projector, and so Vega had one permanently installed.
On regular days, they have happy hour. While they do not have a kitchen, their regulars can order from nearby The Smoking Joint to enjoy ribs, beef brisket, and wings with their drinks. It’s all very laidback and easygoing, which allows the stellar alcohol and (hopefully) engaging conversation to take center stage.
